We are thrilled to announce the opening of a new venue in the beautiful coastal town of Cascais, belonging to a renowned holding. This venue is a unique and unpretentious hidden gem amongst the Cascais drinking and dining establishments. Embodying the inimitable hospitality and warmth of Cascais, is a modern, stylish and vibrant ‘pub and restaurant’ with a passion for traditional wines and cuisine at its heart. Amazing drinks and exceptional food with drink specialities make it a genuinely one-off Cascais venue that is refreshingly different.
We are looking for a passionate and ambitious Head Chef to join and build on the existing team serving amazing fresh produce. As Head Chef, you'll be supported in leading the kitchen team to deliver consistently excellent standards. **What's on the Menu?**
In keeping with its unique country pub, fine dining and private dining atmosphere, we offer a mouth-watering menu of home-cooked dishes, ticking all the boxes when it comes to traditional authentic comfort food and classics. Sourcing fresh, seasonal produce on a daily basis from a range of local suppliers, all of this pub’s dishes are cooked on site, including a selection of tempting specials and imaginative vegetarian options.

**The Head Chef's responsibilities include**:
- Launch of a new venue with the aim of achieving Michelin Star.
- Menu autonomy within brief
- Managing, hiring, and training the kitchen staff.
- Implement policies and protocols that will maintain or raise our service standard.
- Ensuring consistently impeccable standards of Food Hygiene and Health & Safety
- Enforcing kitchen team compliance with standards, procedures, and rules.
- Deal with suppliers and ensure that they supply the highest quality at affordable prices.
- Stock management including supplier liaison, controlling wastage to achieve GP Show initiative, drive and passion, thinking on your feet to handle high-volume shifts.
- Maintaining or raising the profit margins on food.
- Oversee the maintenance of the kitchen and its equipment.
- Handling staff-related issues.
- Managing the schedule of the kitchen and dishwasher teams.
- Maintain records of payroll and attendance.
- Assuming overall responsibility for daily kitchen operations.
- Leading the kitchen team in collaboration with the sous chef.
- Overseeing the food preparation processes.
- Collaborate and manage with the restaurant manager that the guests receive excellent service and enjoy their culinary experience.
**Requirements**:
- Be a strong leader to your team, coaching staff and encouraging their development.
- Passionate about food and continually pushing standards.
- Enthusiastic about exceeding expectations through delicious food, working alongside the front of house team to deliver great customer service.
- Experience in financial management. Proficient in using MS Office.
- Familiarity with Micros Oracle (or another POS platform).
- Ability to multitask and thrive in high-pressure environments.
- Use excellent attention to detail to deliver impeccable standards.
- Fluent in English.
