Job Description: Pizzaiolo (Pizza Chef)OverviewA new Italian-inspired bakery, pastry shop, and specialty coffee concept in Óbidos, Portugal, is expanding its portfolio with a dedicated line of pizzerias. To support this growth trajectory, the team is seeking a passionate and skilled Pizzaiolo (Pizza Chef) to lead pizza operations and help shape the creative and operational direction of the brand's new pizza offering. Role SummaryThe Pizzaiolo will be responsible for overseeing the full pizza production cycle, from dough preparation to final bake. The ideal candidate brings deep knowledge of traditional Italian pizza-making techniques, thrives in an open-kitchen environment, and consistently delivers high-quality products aligned with authentic Italian standards. Key Responsibilities Prepare and manage pizza dough, ideally using long-fermentation methods such as poolish or sourdough, ensuring optimal texture, flavor, and digestibility. Stretch, top, and bake pizzas following signature recipes and product standards. Operate and maintain professional pizza ovens (electric, wood-fired, or stone deck) safely and efficiently. Manage daily dough production, fermentation schedules, and overall quality control. Support menu development by testing and refining toppings and seasonal variations aligned with Italian culinary principles. Oversee mise-en-place, ingredient preparation, and workstation organization. Ensure strict adherence to hygiene, HACCP, and Portuguese food safety regulations. Collaborate with the kitchen team to maintain smooth service flow during peak demand. Plan and execute production schedules for daily operations and special orders. Maintain consistency in portioning, presentation, and product quality. Train junior staff in dough handling, pizza production, and oven management. Contribute to menu strategy, product launches, and special event offerings. Uphold high standards of cleanliness, discipline, and craftsmanship across the operation. Candidate Profile and Requirements Proven experience as a Pizzaiolo or Pizza Chef in an Italian-style pizzeria, café, or restaurant. Expertise in traditional Italian pizza styles, such as Neapolitan or Roman. Strong understanding of dough fermentation, hydration ratios, temperature control, and baking dynamics. Ability to work efficiently under pressure without compromising quality. Solid knowledge of HACCP and industry food safety standards. Strong teamwork, communication, and organizational skills. Leadership abilities to oversee production and mentor staff. Culinary training is an advantage but not mandatory. Fluency in English required; Portuguese or Italian is a plus. Passion for Italian gastronomy and artisanal craftsmanship. Italian nationality not required, although candidates with this background may receive preference.
